Learn to make a tasty and nourishing winter stew taking advantage of one of the most affordable local veggies, green cabbage! We will also be incorporating local lentils from Saanichton, which are nutritional powerhouses in this tomato and coconut milk-based Moroccan vegetarian stew. To round this class out, we will also be making a simple flatbread to go with our stew!
About the instructor: Chef Michael Williams is the co-owner of Urban Forage, a local business with big heart. For the last two decades Chef Michael has been serving up savoury dishes while catering to and teaching Victoria through cooking classes and as host of CHEK TV’s Cookin’ On the Coast. Working together with local farmers and purveyors, Michael builds his Urban Forage cuisine with health and vitality in mind while keeping amazing flavour at the forefront!
